Cajun Fries

2 russet potatoes cut into fries, soak in cold water in the fridge for an hour to remove some starch. Drain. Fry @325 until half cooked, remove from oil, drain completely, turn oil up to 360 and fry until done. Releasing the starch and the partial fry keep them nice and crispy. Once done, season immediately to your taste. I make my own Cajun blend cuz I use it quite a bit.
